If you like dark, nearly red, full powered roses, you have to try the Amaury Coutelas "Elixr" Brut Rosé Champagne. This is composed of 67% Pinot Noir and 33% Chardonnay but assembled in a completely unique way. Half of the Pinot Noir, sourced from very old vines is macerated into red wine, giving this Champagne strong vinous power and a tremendous amount of savory black cherry fruit. This is a great choice for game birds or turkey. A real powerhouse!

Angelique and Damien have 17.5 acres, mostly in Villers-sous-Châtillon, but also in Ambonny, Bouzy, Vitry-le-François, and Troissy. Their family has been growing grapes since 1809 and started making their own Champagnes in the 1920s. The majority of their vines are over 60 years in age, and all the work in the vineyards and cellar is done by hand. The "Elixir" Brut Rosé Champagne is composed of 100% Pinot Meunier (50% rosé de saignée). It is a beautiful deep salmon color with a lively, fine bead. The nose reveals delicate red fruit notes underscored by citrus. It is full and round in the mouth, with great volume and creamy richness on the palate. (Gary Westby, K&L Champagne buyer)
