This artisan Mezcal was made by Don Cosme Hernandez and his son Cyril San Baltazar Guelavila, Tlacolula, Oaxaca. by traditional artisan method. The maguey hearts are havested and baked underground in the traditional cone-shaped oven, after which they are mashed by a stone wheel powered by horse. The juice ferments and is then double distilled in copper stills, in small batches. This release is intense and wild, with smokey mineral and grassy aromas and flavors that play off ofsweeter notes of spiced coconut and green fruit. Strong flavors with subtle nuances build towards a distinctly mineral finish.
