Reviewed April 2025The NV Extra Brut Sous Bois (base 2018) is a major step up from the 2017. Then again, this vintage was much more favorable. Aromatic, bright and sculpted, the 2018 is so complete. Silky contours and well-judged oak give the 2018 a great deal of finesse to compliment dried orchard fruit and floral nuances. In this release, the Sous Bois is 63% 2018 and 37% reserve wines. (AG)

A crunchy and rich Champagne with flavors of cooked apple, light caramel, nuts and cedar, as well as orange zest. The bubbles are creamy and round with a long, energetic finish. Tangy. Base wine fermented in barrels. 48% pinot noir, 32% chardonnay and 20% pinot meunier. 74% 2016 and 26% reserve wine, including the oldest wine from 2006.

Fragrant, with hints of graphite, cherry blossoms and spices, revealing a firm frame of vivid acidity that's tightly meshed with flavors of blackberry tart, lemon granita and salted Marcona almond. Shows a raw silk–textured mousse that carries a chalky note on the finish. Pinot Noir, Pinot Meunier and Chardonnay. (AN)

Decanter
Fermented and aged over winter in second-hand small barrels and barrels seasoned in-house (although future editions will include wine from larger casks). Rich and inviting apricot and kernel notes, brown butter and nutty honey. Some soft strawberry and an appetising, tangy apple length, highly expressive but really rather polished and rounded out. One third each Pinot Noir, Meunier and Chardonnay. (TH)

The current batch of the Sous Bois from Billecart Salmon is based on the spectacular 2008 vintage, and the combination of richness from the all barrel vinification and the extraordinary acidity of the vintage makes for one of the most impressive bottles in their line. If you haven't tried this newest addition to the great line from Billecart, don't miss out, the 2008 based wine is very special!

Red apple skin and lemon notes are the most prominent flavors of this Champagne. It's full-bodied and powerful with firm structure and acidity. Serious wine that should be paired with richer seafood, like lobster, tuna or swordfish. It opens up a lot in the glass as you drink it and shows more sides of it. Definitely a unique Champagne.

I think that this latest version of this wine is probably the best one yet. It has a rich nose of golden apples and subtle, soft, oak. Also rich on the palate with baked apples, sea salt and a hint of minerals. Rich and round, with excellent acidity and depth. The once controversial champagne (for our staff), has found its sweet spot and is an excellent example of this style of champagne. It is a great pick for both the adventurous and those of you who are really into food and Champagne pairing.
