This release of the NV Champagne Blanc De Blancs is with the 2018 vintage base as well as 37% reserve wine. A bright medium yellow golden hue, it opens to a lifted and dewy profile with notes of linen, pear, and a hint of tropical fruit of passionfruit and quince coming through. Floral, fresh, and medium-bodied, it floats on the palate with a weightless, airy feel and a very pretty nature throughout. It has a fine mousse and a clean, chalky textured finish that tapers away. It will be very appealing now or over the next 12-15 years. It has the addition of 3.9 grams per liter dosage and was disgorged in May 2024. (AF)

I do not get to taste Billecart-Salmon these days with anywhere near the frequency I once did, so I was delighted to have an opportunity to taste this bottle of their non-vintage Blanc de Blancs from the Base Year of 2014. The wine is made from fruit sources in the villages of Mesnil, Chouilly, Cramant and Avize, with the vins clairs fermented and raised in stainless steel tanks. Part of the malo is blocked in certain vintages and the wine includes up to forty percent reserve wines from the previous vintage. It was finished with a dosage of eight grams per liter and is drinking beautifully today, offering up an almost silky palate impression. The bouquet is nicely polished and quite complex, wafting from the glass in a mix of lemon, tart pear, chalky minerality, bread dough, white flowers and a topnote of citrus peel. On the palate the wine is bright, full-bodied and nicely mineral in personality, with a fine core of fruit, elegant mousse and a long, complex and very nicely balanced finish. This is really drinking very nicely and still has plenty of life ahead of it. (Drink between 2024-2045)

Very clean and creamy blanc de blancs showing notes of sliced apples, pie crust, lemons, oyster shells and thyme. Lovely freshness and balance, with fine, creamy bubbles and a rounded yet dry finish. Base wine 2017 with 23% of reserve wine. 1.2g/L dosage. Drink now.

The NV Brut Blanc de Blancs Grand Cru is showing beautifully today, with aromas of confit citrus, pear, herbs, orchard fruits, pastry and brioche. Medium to full-bodied, it is round and supple with the delicate, bright tension that is the signature of Billecart-Salmon. Perfectly balanced and offering a vinous, toasty and elegantly long finish, it's based on the 2017 vintage with 23% from 2016. Vinified and matured in stainless steel, it spent five years on the lees in bottle before being disgorged with a dosage of 1.7 grams per liter. (YC)

If you like your Champagne clean and refreshing, this is the best bottle that we have for you. Antoine Billecart insists on fermentations that are slow and cold, and the family has developed its own strain of yeast that can work in super low temperatures, resulting in a Champagne that is light as feather and arcs with electric excitement. This wine delivers all of this without any harsh grain, since it has been aged for over sixty months on the lees... A fabulous treat!

The Billiecart Salmon Blanc de Blancs is super a super clean, refreshing champagne. On the nose there is a nice bit of brioche, bright Meyer lemons and a small hint of apple. On the palate its very light, mineral and high acid showcasing a long chalky finish. Love the Meyer lemon notes on this guy!

Crisp green apple, Meyer lemon, and the faintest brioche aromas pop out of the glass of this blanc de blancs stunner from Billecart-Salmon. On the palate it's fresh and electric, with ripe citrus flesh flavors, a delicate bead, and a long, chalky finish. This would make a great aperitif and would drink beautifully with a dozen briny oysters on the half shell!

Audrey Frick's notes on the producer for jebdunnuck.com: "Mathieu Roland-Billecart assumed the position of CEO at this estate in 2019 and represents the seventh generation in his family. The house is based in Maureuil sur Ay, which is also the location of the monopole vineyard of Clos Saint-Hillaire. They source from approximately 300 hectares of vines, of which they own a third. French and Stockingur barrels with medium toast are purchased new and seasoned at the house for three to five years before use. About 80% of production is fermented and aged in stainless steel tanks. Only the best plots are fermented in barrels at cold temperatures, before getting transferred to stainless steel tanks for aging after no more than six months. None of the wines are aged in barrel, and they never allow for malolactic fermentation to occur in barrel." (11/2022)
