This is spectacular sparkling wine, by any measure. Though the temptation is to compare a cava of this quality with a good Champagne, we will not do so here. Better to focus on the excellent, perfectly exposed, organic, chalky vineyard where grapes optimally ripen while maintaining terrific acidity and showing off their minerality. Also, we would be remiss not to mention the small production of this bodega in a sea of big houses. Finally, there is the small bead, elegant texture, precise flavors...wait a second, there does seem to be something in common with a very good Blanc de Blancs grower champagne, here! Oh well, we tried to avoid comparisons...Avinyo's top end, single vineyard bottling stands on its own as a singular expression of macabeo and xarel-lo grapes, though if you are a discerning Champagne drinker you might just have stumbled upon a real value, here.
