The legendary aged liqueur of the Carthusian Monks is becoming more limited every year. Demand is through the roof on their highest-end liqueur, the VEP or Vieillissement Exceptionnellement Prolongé. After standard aging in large casks in their vast cellar in Voiron, a standout cask is selected and then filled into Taransaud oak barrels to be aged for an additional period of about 8 years. It is truly one of the world's great delicacies. Because of the unusually difficult method of production, supply cannot be increased so expect shortages indefinitely.
