Reviewed December 2008The 1995 Dom Perignon Oenothéque is the second release of this wine, and was disgorged in 2005. This silky-textured Champagne reveals breathtaking finesse, elegance and clarity in its perfumed bouquet, with delicate notes of pears and roasted nuts that add further complexity. The finish goes on and on. This mind-bending, kaleidoscopic Champagne possesses all of the qualities of profoundness, most importantly the ability to develop beautifully in the glass and the potential to acquire even more depth in bottle over the coming years. 1995 was a hot vintage, but this wine remains remarkably fresh. One of a series of limited releases of older vintages of Dom Pérignon, this wine is showing the mature richness of the vintage and of the Dom Pérignon style. It has toast, yeast, roasted almonds, a powerhouse of ripe fruits and a smooth, creamy aftertaste. Let this wine breathe before drinking, it will be worth it.

Toward the end of the 18th century, Jean-Remy Moët, grandson of founder Claude Moët, became famous as the man who introduced champagne to the world. The first vintage of Dom Pérignon was 1921 and was only released for sale in 1936. The core of the blend is the eight grand crus - Aÿ, Bouzy, Verzenay, Mailly, Chouilly, Cramant, Avize, Le Mesnil - plus the Hautvillers premier cru. The current owner, LVMH was founded in 1987, as a result of the merger of fashion house Louis Vuitton with Moët Hennessy, itself formed after the 1971 merger between the Champagne producer Moët & Chandon and Cognac-maker Hennessy. It has never ceased to amaze me how Moët manages to produce what is reputed to be on the order of two million cases of Dom each time it's released while still delivering fantastic wine.

Rich in texture and beautifully balanced, showing lemon, honey, floral and peach notes. There's just a hint of toast and brine. This is lively and reveals candied citrus on the lingering aftertaste. Excellent length. Disgorged in 2005. Drink now through 2020. (BS)

This is a serious bottle of Champagne. The Oenotheque program at Moet gives us a glimpse into another time for Champagne, when the best wines were given a long healthy ageing on the lees before release. Comparing my notes to the original release of the 1995 vintage, I was surprised to see that I found this recently disgorged version to be fresher in many ways than the standard disgorgement! The Champagne has a straw-gold color and a toasted sourdough nose that is identifiably DP, with just a hint of golden pears that suggest Meursault. On the palate the wine has it all- a bakery full of doughy goodness but with a brilliant, crisp mineral element to balance out the richness. It is much, much drier than any modern original disgorgement of Dom on the finish- a master stroke by their team to bring this decadent bottle into focus. The wine is unbelievably long finishing, and I expect that it will grow in memory. A tribute to the blender’s art!
