This tasty wine is almost full Champagne pressure at 5 atmospheres. It is produced from 37-year-old vines at about 900 feet. This spumatne is perfect for wine lovers looking for something a little bit drier, more bubbly and fuller bodied than Moscato d’Asti. I found it to have lots of exotic aroma, a nice mousse and a sweet but clean finish.

Moscato grapes, being particularly aromatic, require a special winemaking technique in order to preserve the fruit's potent fragrance and to create a wine that is light on its feet and a fine accompaniment to fruit and nut-based desserts. The gently pressed grape juice is kept in refrigerated tanks until it is processed into the autoclave to obtain a sparkling wine by means of a fermentation at controlled temperature, using selected yeasts. 7.10% alcohol, with 95.20 g/l residual sugar. Importer's notes: "La Selvatica is the Dogliotti family's Asti Spumante, made from a single vineyard near their winery. Asti is made very similarly to Moscato, but the fermentation is taken further, so the finished wine differs from Moscato d'Asti in that the alcohol is slightly higher (7%), the residual sweetness is lower, and there are more bubbles (since more sugar is consumed). Some people drink this as an off-dry aperitif; I love it with cookies or by itself after dinner. (Both of these wines are excellent with Thanksgiving desserts; they go very well with pumpkin pie and fruit pies, and the lower alcohol and sugar is welcome.)
