This Champagne has the necessary bottle age for its bone-dry character to be softened and given great complexity. The wine’s freshness and apple fruits are palpable but they have attractive nutty hints that make this fine bottling ready to drink. (RV)

The ultimate sushi Champagne! The Laurent Perrier Ultra Brut is quite austere Champagne, even though it was aged for over 10 years on the lees, but it comes alive when paired with raw fish. The precision of this wine will thrill you with everything from toro to unagi. Try it out, you won't be disappointed.

If you think that Ultra Brut is always bracing and overly acidic, you haven't had the LP. With a white flower dominated nose (lilies, elderflower) to lemon mousse scents, it is fragrant and accessible. On the palate, there is lemon/key lime, green apple and sea salt. So perfect with sashimi!

Quite possibly the driest of the dry, I've had when it comes to champagne. The Ultra Brut from Laurent Perrier is unique in it's own right and worthy of a try to the Champagne lover.

Notes

The Laurent Perrier Ultra Brut is one of the very few Champagnes shipped naked, with no dosage (finishing sugar) at all. It is a very special blend, made only from exceptionally ripe harvests. This cuvee is composed of half Chardonnay and half Pinot Noir from exclusively grand cru vineyards. This Champagne is dry and precise without being strident or harsh. It has great chalky grip, a rich underlying yeast quality and finish that goes on forever. It is especially fantastic with sushi! (Gary Westby, K&L Champagne buyer)
