Review Date: 12/1998Earth, mushroom and toffee on the nose. Big, rich and very dry; features the typical, maturing Bollinger flavors of coffee and toffee but lovely ripe acidity gives the wine terrific freshness and superb cut. Full, creamy and complex. A superb R.D. from a great vintage. (ST)

Champagne Bollinger owns 150 hectares of vines (375 acres) that provide for 70% of their grape needs. This wine is made almost exclusively from those estate vineyards, 58% of them grand cru and 42% of them premier cru - a stark contrast to most big houses who use a great majority of purchased fruit. The blend is 65% Pinot Noir and 35% Chardonnay and the wine was kept on its yeast for 13 years before being disgorged in 1998. It has a beautiful white gold color and a super complex bouquet of truffle butter and deep Pinot Noir fruit. On the palate the Champagne is ultra rich and yeasty but completely dry. It is labeled as Extra Brut but tastes as if it hasn't been dosed at all and the finish is more focused than usual for such a big wine. Exceptional Champagne!
