On the left bank of the Serein, Vaillons is one of Chablis' premier cru vineyards, rooted in the region's characteristic Kimmeridgian limestone and marl. Raveneau's traditional approach includes hand harvesting and maturation in older oak barrels rather than an emphasis on new oak.
