This really has not changed all that much from my original review save that the maturing nose of toasty, expressive and highly complex aromas feature notes of pain grillé, green fruit and dried rose petals is not quite as fresh as it once was even in the larger format. There is fine richness to the rich, full-bodied, well-muscled and impressively intense flavors that possess plenty of dry extract that really coats the mouth on the long and serious finish.

Domaine Michel Caillot is a family estate in Meursault founded by Roger Caillot in 1961–1962. Roger assembled vineyard holdings across the Côte de Beaune, and his son Michel joined the domaine in the late 1980s before assuming responsibility for winemaking and élevage in the mid-1990s. Today the estate farms roughly 13 hectares, divided between white and red varieties, with key holdings in Meursault, Puligny-Montrachet, Bâtard-Montrachet, Pommard, Volnay, Beaune, and Monthélie. Michel practices organic farming methods without certification, avoids herbicides, and keeps yields low through pruning and green harvesting. The domaine is known for its unusually long élevage. Wines ferment with native yeasts, move by gravity through a three-level cellar, and remain on their lees for extended aging before bottling. This approach has become a defining feature of the estate under Michel’s stewardship.

There is just enough reduction to compress the otherwise ripe and mildly exotic yellow fruit aromas. There is outstanding volume and very solid mid-palate concentration to the extract-rich flavors that possess excellent intensity on the delicious, long and mouth coating finish. This is presently not quite as complex as the Morgeot but the underlying material gives me reasonably good confidence that more will develop with time in bottle.
