Black fruit, lavender, licorice, spice, chocolate, melted road tar and licorice build in a powerful, virile wine endowed with tremendous structure, power and concentration. At times, the Chabot can be deceiving, such is its finesse, but there is quite a bit of depth here. “Another small, single vineyard release, the 2018 Cabernet Sauvignon Chabot Vineyard comes from St. Helena and is 100% varietal that was aged in 72% new French oak. It has a complex, nuanced nose of red and black fruits, black tea, lavender, and tobacco. This carries to a medium to full-bodied, elegant Cabernet with a solid spine of acidity, firm tannins, and outstanding length. It’s beautifully done, but it’s going to benefit from 3-5 years of bottle age and should evolve gracefully for 10-15 years or more. (JD)” (01/2021)
