Domaine du Colombier in Mercurol has been farmed by the Viale family since the early twentieth century, shifting from selling fruit to estate bottling in the early 1990s. The estate now works roughly sixteen hectares across Crozes Hermitage and a small parcel on the Hermitage hill, planted mainly to Syrah with limited Marsanne and Roussanne for whites. Farming focuses on controlled yields and careful parcel management. Fermentations take place in temperature-controlled tanks, followed by aging that varies by appellation, with Crozes typically seeing a mix of tanks and older oak and Hermitage receiving longer élevage in barrels. Production remains centered on expressing the granite and alluvial soils that define these northern Rhône sites.
