Burghound: "A more elegant and more expressive nose evidences distinctly floral notes to the spicy red and dark currant aromas that possess excellent complexity. I very much like the silky texture of the concentrated and opulent mid-palate of the delicious and equally complex middle weight flavors that exude a subtle minerality onto the beautifully long and balanced though mildly austere finish. As is usually the case this is built-to-age and will definitely need it. I would add that among the Chevillon big boys though that if you were going to try one young I would suggest this one. *Sweet Spot, Outstanding*" (01/2016)

The 2014 les Cailles from the Chevillon family is equally stunning. The bouquet is deep, pure and remarkably vibrant, jumping from the glass in a blaze of cherries, pomegranate, nutskin, woodsmoke, gamebird, stunning minerality and a deft framing of new wood. On the palate the wine is pure, full-bodied and sappy at the core, with great elegance and depth, laser-like focus and a very long, tangy and ripely tannic finish. An absolutely superb and classic example of les Cailles. (12/2015)

Vinous

Dark red with ruby highlights. Very reticent nose hint sat candied berries and smoky minerals. Then sweet, sappy and brisk on the palate, delivering an exciting balance of sucrosité and mineral-driven acidity. The black raspberry and crushed-stone flavors mount impressively on the long, refined back end. Shows a medicinal reserve that suggests this wine will be a slow developer, but even today the tannins are nicely buffered by fruit. (ST) (01/2016)

Tasted blind at the Burgfest 2014 tasting, Chevillon's 2014 Nuits St Georges 1er Cru les Cailles feels a little diffuse on the nose at first. Those scents of raspberry, bergamot and pomegranate feel rather disparate, as if they need to be lassoed together. The palate is medium-bodied with grainy tannin: the fruit a little darker and the texture grainier than expected. The winemaking comes through a little more strongly than I expected here, and the finish feels a little gruff at the moment. I am sure that bottle age will ultimately smooth over the rough edges here, so just be patient. (NM) (10/2017)
