The wonderful mezcal produced by Macurichos in Santiago Matatlán, Oaxaca is likely the best being made in the entire town. This is the heart of mezcal production and Macurichos is second to none in the area. Maestro Mezcalero Gonzalo Martínez Sernas distilled this 100% Espadín Criollo (A. angustifolia var. rubescens) after cooking in a conical earthen oven using pine and mesquite. Milled using a horse-drawn stone tahona and Fermented in oak tinas (vats) using deep well water. Distilled twice using traditional copper pot stills; moth larvae(Comadia redtenbacheri), the famous Oaxacan delicacy, is added to the pot during the second distillation. It's rested in glass demijohns for 6 years before bottling. While the use gusano can be signs of a tourist trap, the tradition of using the flavor bug to augment the flavor of mezcal is a very old and traditional practice. The gusano is reveried for its distinctive flavor and this excellent mezcal offers it on full display. Heavy and dense with a distinctly earthy, oxidative profile; savory notes of toasted nuts, old linen, damp soil, and dry sausage mingle with orchard fruit, sweet potato, and dried cherry.
