This new brand from the creator of 5 Sentidos Mezcal is truly a new chapter in craft rum. The fact is, this isn't some new distillery putting out experimental batches, this is the new work of a long standing rum distilling family in the highland of Oaxaca. They've produced cane spirit here for many many years and now they're expanding their efforts to new styles with the vision and drive of Jason Cox behind them. The resulting rums are completely original and offer an experience that should entice any lover of spirits to investigate the potential. I fell completely in love with many of their rums, but this barrel stood out from the pack by delivering an incredible balance between the raw ingredients, the mountainous aging environment and the high quality new French oak. Shall we? The color is a twinkly burnished (1.1). The nose immediately jumps out of the glass and lingers in the room. Its zesty and fresh with wild aromas of citrus oil, tea tree, kumquat, wormwood, fenugreek, fresh pine needles, new leather, stewed olives and maple cookies. On the palate it very textural and offers a creamy almost roasted corn note, sweet smoke, pasilla pepper, peppermint candy, licorice bark and wild herbs. It's very drinkable and surprisingly easy despite the high proof and unusual flavor profile. There's simply nothing out there anything like this. Even among the lovely and diverse rums coming from the Krassel's wonderful distillery in Santa Maria Tlalixtac, this one is a truly special one.

Notes

This incredible single barrel from the Master's in Santa Maria Tlalixtac sets a new standard for complexity in Oaxacan rum. Harvest between 2500-3800 feet above sea-level exclusively from the Java varietal of estate grown sugar cane. The cane is crush and the fresh juice put into pine vats for up to ten days of fermentation without any additions of yeast or other chemicals. When the natural fermentation is complete Rommel Krassel distilled the batch on his small 250-liter custom built pot still. It was filled into new French oak casks and aged in their driest warehouse for just shy of 1 and a half years before being transferred into open-topped demi-john for an additional 6 months of resting. Finishing in glass allows for an oxygenation period which adds body and complexity resulting in a 14% angel's share. It was bottled at full strength of 130.8 proof without additions of any kind in October of 2023. The powerful aromas of tropical spices, dense fruit, fresh leather, exotic wood, and sweet fruit compote are briming from the glass. The high proof not immediately obvious on the palate hiding behind deep flavors of cinnamon, clove, black tea, wild honey, and dried tobacco. A totally unprecedented experience that can only be understood after opening a bottle of this unparalleled elixir. We're excited to see the incredible things Alambique Serrano will achieve in the future and this is about the best craft rum on the market today.
