Arnaud Fressonnet, a Frenchman from Burgundy who came of age in Mexico, partnered with maestro destiladors Rommel and Alex Krassel to establish Tostaky Spirits in 2016, combining French and Oaxacan traditions to create the distinct eaux-de-vie label, Edénico. Their meticulous production process involves hand-harvesting fruits within a 50 km radius of their Sierra Norte distillery. The fruits are prepared by removing seeds and skins, then mashed and mixed with spring water and Champagne yeast for fermentation in closed-top, stainless steel vats for 10-12 days. The required volume for a batch varies depending on the fruit but typically runs about 10 kilos/liter of spirt. Double distillation takes place in small copper alembic pot stills before the spirits rest in glass demijohns for a full year, allowing flavors to develop further and resulting in a refined beverage. Bottled at 42% alcohol by volume (ABV). Fressonnet and the Krassel brothers have successfully merged two cultural traditions into a unique Oaxacan fruit brandy that showcases local flavors and European eaux-de-vie influences through a devoted attention to detail in the Edénico production process.
