Single origin nutmeg fruit is sourced from Zanzibar and it is dried to preserve the bright citric flavors it possesses. This fruit is considered a by product of nutmeg spice production and the upcycling creates an additional revenue stream for the small farmers from which its sourced. Along with the Zanzibari nutmeg fruit, nutmeg seed and mace of the highest quality are sourced from Indonesia and transported to the distillery on the North Fork of Long Island. These botanicals are then macerated in a non-GMO alcohol solution for 48 hours to extract every bit of flavor and aroma possible. The infusion is then distilled slowly on a copper still. The spirit is rested in glass demijohns for at least two weeks before proofing and final adjustments, adding a balancing sweetness and bottled. Expect a soft earthy entry with spice heat building slowly through the mid-palate, progressing from sweet nutmeg to the nearly clove-like notes of powerful mace.
