This sake, which I tasted today, has a refreshing nose of white flowers, minerals. cream and pineapple. On the palate, at once lively and a little delicate. Very creamy, with a light bubble/fizz, pear, cantaloupe, vanilla and the merest hint of minerals. A very easy and delicious sake.

The "freshly pressed" Alpha 3 is a single pasteurized Junmai Daiginjo. Using a proprietary bottling technique Brewery Yucho Shuzo, which has been a leader in the Nara region for 300 years, allows plenty of C02 to remain in the sake. The result is something effervecent although not as "sparkling" as the typical sparkling sake, using added CO2 or seconardy fermentation. The light zippy character further bolsters the already excellent acidity in this unique and completely delicious Junmai Daiginjo. Using 100% akitsuho rice, a rare heirloom varietal from the region, behind the slightly unusual production techniques are gorgeous tropical fruit flavors one might expect from a quality junmai daiginjo. While the bubbles might subside if not consummed in the first day or two, the sake continues to give excellent drinking for several days or weeks after opening, an unusual quality in a junmai daiginjo.
