This is the youngest Amontillado from Gonzalez Byass, with four years of aging under flor and another four years in oxidative aging. True to form, it is a delightful wine, graceful and elegant in its fine balance between acidity, minerality and a soft, almost delicate body. It takes on surprising force with air, a sense of limestone in scent and flavor that propels the wine toward something rich, like grilled sea bass.

Lemon peel, singed almond and walnut notes form the core, with a faint clove hint meandering through as well. Offers a bracing feel on the finish, with a bitter green tea echo. (JM)

This amontillado smells complete, with a tight aromatic mix of raw wood, brine, citrus and dried stone fruits. The palate is racy, with razor-like acidity. Intense flavors of dried apricot, tart nectarine and almond skins finish full and lasting, with cutting acidity. (MS)

The NV Vina AB Amontillado is the youngest of the Amontillados in the Gonzalez-Byass lineup. Produced from Palomino grapes, it has four years of biological (under yeast) aging, and a further four without flor. It has a deep yellow color, a clean, discrete nose of Fino, chalky with its salty notes, but the palate is clearly an elegant, light Amontillado, with intense, piercing flavors, and it fills your mouth, ending very dry. Very drinkable and good value entry-level Amontillado. A leader in young Amontillado category. (LG)

González Byass is one of the most well-known sherry bodegas in Spain, dating back to 1835. This Vina AB amontillado is quite light on the palate and tastes super fresh with the perfect balance of saltiness and acidity on the palate. The sherry spends 4 years under flor before being moved to the AB solera for a further 8 years where the wine will slowly oxidise as the flor dies off, resulting in a total of 12 years in barrel. This is an excellent sherry at a very reasonable price and would be the perfect introduction for someone wanting to explore the diverse world of sherry.

Notes

This is a wonderful, lighter style of dry amontillado, a wine which begins its life as a fino (underneath a veil of flor) and then ages briefly oxidatively. You could call this lighter, brisker style of amontillado a "fino amontillado," given the especially tangy, fresh, fino character. Basically, this is Tio Pepe with some more aging in barrel. Fresh, salty, and stone fruit aromatics have just the barest hint of wood influence, and lead to a wonderfully tangy palate of citrus (tangy dried orange in particular) and almonds. A classic, and a terrific accompaniment to a variety of cured cheeses, charcuterie (Spanish choices such as chorizo and Ibérico ham are obvious picks) and other tapas. One very specific and typical pairing would involve dishes using mojama, the delicious, salt-cured tuna belly that is cherished in Andalusian cuisine.
