Yucho Shuzo has been brewing sake in Nara for over 300 years. Many consider the region to be the birth place of Sake, and Yucho has been integral in the recreation of some of the oldest brewing techniques in Japan. In Gose village, the brewery is surrounded by touring mountains with many rivers and impressive waterfalls. This unpasteurized sake is also unfiltered and undiluted. The brewery uses #7 yeast and Akitsusho rice polished to 60%. A natural sediment and slight effervescences is normal. A popping top is normal unusual so please be careful! The aromas are characterized by rich floral and herbal notes coupled with a clean fruity palate and long dry finish. An interesting, yet thoroughly friendly Nama.
