This pair of Cognacs is one of the most exciting side-by-side comparisons we've ever offered. The rarity of unadulterated single-cask Cognac cannot be overstated. The fact that these two casks are from the much sought-after Borderies region makes it even more astounding. Either one is superb on its own, but the next-level magic is when you taste these sister casks side by side. Separated at birth and aged in very different cellar conditions, this pair makes for a stunning lesson for any spirits enthusiast to study, let alone a Cognac geek. The Dry Cellar is a heady mixture of dried tobacco, eucalyptus, spring blossoms, mulled apple cider, and flaky pie crust. The palate is hedonistic, full of refined, delicate oak tannin giving super supple texture and a complex range of flavors from spice box to aromatic cedar to berry compote. The finish is very long and pleasing. It's mellow and cool and walks through a forest of savory notes and a garden of fruitful delights. Bottled in 2014, it's a superb 22 year old Cognac that miraculously went unnoticed in some distributor's warehouse until recently when they sold it to us at a steep discount. There are rarely opportunities like this. Only 30-40 bottles of each expression remain.

We've discovered a tiny remaining allotment of rare, single-cask Borderies Cognacs. Barrels #22 and #151 present a particularly interesting comparison. Both were distilled in 1992 and separated at birth. Barrel #22 found its way into a very humid cellar, while barrel #151 was aged in a dry cellar. They were bottled 22 years later at cask strength and without chill filtration or coloring/sugar. The result is an incredible study in how Cognac ages and the effects of the aging environment. Barrel #151, aged in a dry environment, shows much more sweet wood influence than cask #22. The vanillins are off the charts, and a long, fine tannin structure is evident. If you smoke cigars, this Cognac makes a perfect pairing. If you don't, it's the right choice for a night where you cannot decide between whisky or brandy.
