Aged for over a decade this Koshu is a rare style to see in the United States - there are only a few that get imported, but it is surely a treat to see and taste. Kanbara's Ancient Treasure is a Yamahai Junmai Genshu Koshu and has incredible notes of toffee, sea salt, soy sauce, Moutai Feitain, chocolate, and well aged Sauternes. Lots of koji in the production offers an incredible umami profile that matures beautifully over the years. The pairing possibilities are endless - cheese plate, foie gras, wagyu beef.
