The different wood breakdown products enhance the pot still style, bringing confectionery sweetness, dark prunes, and effusive lighter spices. The Method and Madness line from Pernod's Irish Distillers (the maker of Midleton, Redbreast, and Jameson among many other top flight Irish whiskies) was first released in Ireland in 2017. It's finally made it to the United States. The project allows the masters at Midleton room to experiment with unique mashbills, distillation, and wood profiles outside of the traditional bounds of their staple products. Essentially there is a microdistillery within the walls of Midleton. The core pot still expression is is first aged in ex-Bourbon and ex-Oloroso casks and then finished in Chestnut wood from Isere, France offering a unique twist to an otherwise traditional Irish pot still whiskey. Bottled at 46% ABV without chill filtration.
