Orgeat is one of the most historically important bar ingredients. Originating as an almond flavored barley water, the ubiquitous syrup lost the barley and gained a place behind the bar during the golden age of cocktails. It gained new prominence again during the Tiki craze which ramped up in the mid-20th century.
