From master distiller Dave Pickerell, this estate-grown, field-to-flask offering makes good use of oloroso Sherry barrels. Look for peach and vanilla aromas, bold raisin and brown sugar flavors and a gentle exit that just hints at Sherry. At nearly 93 proof, the alcohol makes its presence known, so add some water or vermouth if you must. Attractive and substantial squared bottle.

This long-awaited project from whiskey impresario Dave Pickerell and the gorgeous Hillrock Estate in the Hudson Valley is true craft and one of a kind. Modeled after the sherry solera, this is the first bourbon ever-aged to the exacting standards of an Oloroso from Jerez. Dave built his system precisely to mimic the famous Bodega Lustau's and it involves a multi-tier system where new whiskey is slowly transferred down subsequent tiers to create a seamless and consistent product that includes very old whiskey at the base. In order to get right with the regulators, the first tier is aged in new charred oak for a minimum of 4 years. Each subsequent tier adds nuance and depth to the product, which finishes in 20 year old Oloroso casks before bottling. The weighted average aged of the whiskey on the bottom tier is 6 years, but there are some whiskies in there that are significantly older. Although Hillrock meets the federal definition of straight Bourbon, it is indeed in a category of its own. The long slow solera create a new character the surrounds the familiar flavors of the craft bourbon. The total rye content is close to 40% so this is no sweet corn heavy spirit, but rich sweet flavors abound. Dark molasses, roasted hazelnut, clove, stewed figs and a zippy rye spice. One of the most innovative and delicious new bourbons on the market today.
